Mustard

About Mustard

Mustard seeds (kadugu) are small, round seeds that pop in hot oil and release a nutty, pungent aroma. They are the first step in most South Indian tempering.

How to use Mustard

  • Tempering for sambar, rasam, poriyal and chutney
  • Pickles and thokku
  • Curd rice and lemon rice
  • Grind into pastes for fish curry

Storage

Keep in an airtight jar in a cool, dry place. Fresh seeds pop in hot oil; old seeds do not.
